Nikon and Canon have a good reputation for their pro end cameras, but at entry level there are better cameras out there. They both have limited functions, both are poor build quality, both require you to go into the menu for the simplest of adjustment and both tie you into a very expensive lens system. The Nikon D40 and D60 are particularly bad, no bracketing, only 3 focus points, the list goes on, if your into photography you will grow out of these quickly.

Check out the Pentax offerings, more expensive initially, but much more of a camera in all departments. If you can find a Pentax K10d (just within your budget) grab one, they are a joy to use, and have the cheapest high quality lens system of all the manufacturers.

You can alter EV, metering mode, focus point, focus mode, enter bracketing and adjust the exposure spread, image stabilisation on/off (built into the camera so every lens you fit is image stabilised even a 40 year old K lens) all without taking the camera away from your eye.

Their latest lenses have focus shift, if the auto focus is not quite where you want (when viewed through the bright pentaprism (not pentamirror) viewfinder), just keep the shutter half pressed and use the focus ring to re-focus a tad, no need to switch out of auto focus mode or turn it off. Simple and very quick. Pentax cameras are full of innovative ideas such as that.
